250g roasted & cleaned red bell pepper

300g roasted & cleaned yellow onion

300g roasted & cleaned roma tomatoes

100g chopped toasted marcona almonds

100g torn & toasted leftover gambas bread

250g fermented black garlic

60g sherry vinegar

40g white wine vinegar

12g kosher salt

PROCEDURE
  1. Combine the red bell pepper, yellow onion, roma tomatoes in the pitcher of the vita prep. Blend to smooth.
  2. Add the almonds, toasted bread, black garlic paste, sherry vinegar, white wine vinegar, & kosher salt.
  3. Blend to completely smooth. (You may need a VERY SMALL AMOUNT of water to get the mixture to smooth in the vita prep -- add 1 teaspoon of water at a time)
  4. Store in a squeeze bottle for service.
CRITICAL CONTROL POINT

Tomatoes, Red Bell Peppers, & Onions need to be nicely charred/roasted for deep flavor.
