900g roma tomatoes, halved & seeded

blended oil

PROCEDURE
  1. Halve & seed the tomatoes (see photo)
  2. Toss in blended oil
  3. Set the tomatoes on a parchment-lined sheet tray, cut side down, in a single layer.
  4. Roast 400 degrees until lightly charred and the tomato skins easily peel off. Approximately 20 min.
  5. Remove from the oven, cool slightly, & remove the tomato skins.
  6. Reserve the tomatoes & any juice on the sheet tray for recipe use.
CRITICAL CONTROL POINT
  • Take care not to over-roast the tomatoes -- they will turn to total mush.
  • Roast on high heat for color & char.
