900g roma tomatoes, halved & seeded

PROCEDURE
Halve & seed the tomatoes (see photo)
Toss in blended oil
Set the tomatoes on a parchment-lined sheet tray, cut side down, in a single layer.
Roast 400 degrees until lightly charred and the tomato skins easily peel off. Approximately 20 min.
Remove from the oven, cool slightly, & remove the tomato skins.
Reserve the tomatoes & any juice on the sheet tray for recipe use.
CRITICAL CONTROL POINT
Take care not to over-roast the tomatoes -- they will turn to total mush.
