1 kg whole, skin on yellow onions

PROCEDURE
  1. Place the onions on a sheet tray.
  2. Roast in 400 degree oven until the skins are dark & caramelized.
  3. The onions will collapse on themselves slightly & burst slightly. The sugars from the onion will burn in some spots.
  4. Cool completely before peeling & removing stem.
  5. Reserve for recipe use.
