- Spiced carrots - 4 oz
- Blended Olive Oil - 1 tsp
- Agridulce - 1 oz
- Orange honey yogurt - 1 oz
- Mojo Verde - .5 oz
- Marcona Almonds chopped - .5 oz
- Cilantro sprigs - 4 ea

procedure
- Heat a saute pan over medium heat
- Once pan is hot add the oil and saute the carrots gently for 45 seconds
- Add the agridulce and toss well then remove from heat (IF CARROTS ARE STILL HARD, FINISH IN OVEN FOR 1-2 MINUTES)
- On a oval coupe plate, layer out the orange honey yogurt evenly
- Down the center of the orange honey yogurt, layer the mojo verde
- Neatly stack the carrots over the sauces
- Garnish with marcona almonds and cilantro sprigs.
