  • Whipped Tetilla - 1 oz
  • Serrano Ham - 1oz
  • Chorizo Jam - 1 TBSP
  • Garlic Aiolli - 1 TBSP

procedure
  1. Combine 3 - 2oz beef patty and season both sides with salt and pepper
  2. Lightly oil a plancha and place seasoned beef patty on top
  3. With a burger press, smash the patty until about 1/2 inch thick
  4. Sear well until caramelized crust develops and then flip
  5. Top with the tetilla cheese and serrano ham and allow the crust to develop on the opposite side
  6. Lightly oil the inside of a bun and toast on the plancha
  7. Once the bun is toasted on the inside, put the chorizo jam on the bottom bun and garlic aioli on the top bun
  8. Place the beef patty on the bottom bun and top with top bun
  9. Sear both sides on the outside of the buns on the plancha using the burger press to smash slightly and lightly toast
  10. Place burger in oven for 45 second to finish melting the cheese
  11. Remove burger from oven, cut in half and serve on a large plate with guests choice of side
