- Tetilla Cheese - 1 ea (48oz)

PROCEDURE
- Chop the tetilla cheese into large cubes
- Place on a sheet pan and warm in an oven for about 2 minutes or until cheese melts slightly
- Place melted cheese into a mixer with a wire whip or paddle and whip until smooth, about 5 minutes
- Place whipped tetilla onto parchment paper and roll tightly into a log that is about 3 inches wide and about 8-10 inches long
- Label wrapped tetilla log and put into cooler to reserve for service

- Tetilla log should be wide enough to evenly cover the surface area of the burger
