  • Baby gem lettuce - 4.5 oz wt
  • Caesar dressing - 3 oz fl
  • Chopped Marcona Almonds - 1 TBSP
  • Manchego Crisp - 1 ea
  • Boquerones 4 ea
  • Lime Zest - fresh
  • Pimenton Pulpo

procedure
  1. Core the baby gem lettuce, separate the leaves and wash thoroughly before service
  2. In a mixing bowl, start with the dressing then add the baby gem leaves and the almonds and toss well
  3. Plate high into a round bowl, starting with the bigger leaves on the bottom and the smaller on top
  4. Place 1 manchego crisp in the center and then top with the 4 boquerones
  5. Garnish with lime zest and pimenton
