- Blended Olive Oil - 36 oz fl
- Whole Grain Dijon - 4 TBSP
- Lime Juice Fresh - 8 TBSP
- Sherry Vinegar - 8 TBSP
- Lime Zest - 2 tsp
- Smoked Hot Pimenton - 2 tsp
- Kosher Salt - 1 tsp
- Garlic Diced - 1 oz wt
- Anchovies Diced- 4 oz wt
- microplane Manchego - 2 oz wt
- Capers Diced - 1.5 oz

PROCEDURE
- In the robot coupe puree egg yolks with dijon, sherry, lime juice, lime zest, capers and anchovies until smooth and well incorporated
- While the immersion blender is still running, slowly add in the oil until fully emulsified and thick
- Transfer to a large mixing bowl
- Fold in the grated manchego, pimento and kosher salt
- Portion, label and reserve for service
