  • Egg Yolks - 12 ea
  • Blended Olive Oil - 36 oz fl
  • Whole Grain Dijon - 4 TBSP
  • Lime Juice Fresh - 8 TBSP
  • Sherry Vinegar - 8 TBSP
  • Lime Zest - 2 tsp
  • Smoked Hot Pimenton - 2 tsp
  • Kosher Salt - 1 tsp
  • Garlic Diced - 1 oz wt
  • Anchovies Diced- 4 oz wt
  • microplane Manchego - 2 oz wt
  • Capers Diced - 1.5 oz

PROCEDURE
  • In the robot coupe puree egg yolks with dijon, sherry, lime juice, lime zest, capers and anchovies until smooth and well incorporated
  • While the immersion blender is still running, slowly add in the oil until fully emulsified and thick
  • Transfer to a large mixing bowl
  • Fold in the grated manchego, pimento and kosher salt
  • Portion, label and reserve for service
