- 2.5 ounces Manchego Cheese

PROCEDURE
Grate the Manchego cheese
Using a tablespoon, equally portion out 10 circles of grated Manchego on to a silicone pad
Spread the Manchego out evenly until flat and circular to about 3 inches wide
Bake the Manchego in the oven at 375 degrees, low fan, no humidity for 7 minutes
Remove from oven and let cool
Portion into an air tight container (pint container)
Label and reserve for service

DO NOT use a microplane to grate manchego as it will be to airy and not be the appropriate thickness after cooking
