- 2.5 ounces Manchego Cheese

PROCEDURE
  1. Grate the Manchego cheese
  2. Using a tablespoon, equally portion out 10 circles of grated Manchego on to a silicone pad
  3. Spread the Manchego out evenly until flat and circular to about 3 inches wide
  4. Bake the Manchego in the oven at 375 degrees, low fan, no humidity for 7 minutes
  5. Remove from oven and let cool
  6. Portion into an air tight container (pint container)
  7. Label and reserve for service
CRITICAL CONTROL POINT
  • DO NOT use a microplane to grate manchego as it will be to airy and not be the appropriate thickness after cooking
