A classic slider with a Spanish twist. Sobrasada is a smokey, pork sausage that is full of flavor. The jam & the crispy Manchego, add an incredible sweet and savory element to the burger.

Ingredients Per Slider:

  • 1 each / hawaiian bun, toasted
  • 2 wt oz ground beef patty 80/20
  • 1 wt oz Sobrasada-Bacon Jam
  • 1 ea Manchego Crisp
  • 1 wt oz Julienne Bibb Lettuce
  • 1 tablespoon Garlic Aioli
  • 1 knotted bamboo skewer
  • Salt and black pepper

procedure
  1. Split the buns & toast on plancha until golden brown, set aside
  2. Season the patties with salt and pepper.
  3. Place patties on the plancha and cook for 4 minutes per side until medium well

Assemble the sliders as follows:

  • Spread garlic aioli on both halves of the toasted buns, .5T each side
  • Place Manchego crisp on bottom bun on top of the aioli
  • Using a spatula, take the burger off of the plancha and place on top of the manchego crisp.
  • Spoon the sobrasada - bacon jam to the top of the patty.
  • Add the julienne lettuce on the top of the jam.
  • Top with the other half of the toasted brioche roll.
  • Place skewer through the top of the bun to hold the slider together.

To plate: 

  • Place two sliders on Boqueria parchment paper.

critical control points
  • Season the patties well but be careful to not over salt, as the jam & Manchego are already salty.
  • When preparing the jam, warm up the sobrasada but do not boil. Should be 165 degrees before service
  • Work quickly to make sure all elements are HOT.
