  • 1 pound sobrasada
  • 1 pound medium dice chopped bacon
  • 8 wt oz small dice yellow onions
  • 8 fl oz brewed espresso
  • 8 oz sugar in the raw
  • 3 fl oz Taylor Cream sherry

PROCEDURE
  1. In a small pot, render the sobrasada. Melt the fat on low heat. Strain. Reserve ¼ cup of liquid.
  2. In a small pot, render the bacon until lightly crispy,you will see foam. Strain and reserve ¼ cup of the liquid.
  3. Combine sobrasada and bacon fat in a medium pot andadd chopped onions.
  4. On low heat confit for 30 minutes, until onionscaramelize. Add bacon and sobrasada.
  5. Add coffee and sugar. Cook for 15-20 minutes untilthicken up and has a syrup consistency.
  6. Off the fire add the sherry and mix well
  7. Keep room temp for service.
