Our short rib is braised for 13 hours and the topped on cripsy flat bread with Mahon and Manchego cheese, caramelized onion with black garlic, toasted marcona almonds and pickled baby bell peppers. It's like a Spanish version of a cheese steak, but better.

- Black Garlic Onion - 2 oz wt
- Short rib - 2oz
- Mahon cheese shredded - 1.5 oz wt
- Manchego cheese shredded - .5 oz wt
- Pickled pepper slices - .5 oz wt
- Chopped marcona - .5 oz wt

procedure
- Layer the onion across the flat bread getting to about 1/4 inch away from edge
- Evenly sprinkle cheeses across the flat bread
- Top with the short rib spread evenly across the cheese
- Garnish with marcona almonds
- Bake for 5 minutes at 425, high fan, no humidity
- Cut into triangles and serve on a wooden board
