  • 4 lbs Spanish/Yellow Onions Half Moon Sliced (1/8 inch think)
  • 4 oz Blended Olive Oil
  • 3 TBSP Kosher Salt
  • 8 oz Dry Sherry
  • 6 TBSP Black Garlic Molasses

PROCEDURE
  1. Cut onions in half length wise through the core and then slice in the opposite direction to get 1/8 inch "half moons"
  2. In a large rondou, heat blended oil over high flame and then add onions and salt
  3. Cook the onions until brown color begins to develop and caramelization begins on the bottom of the pan about 7 -10 minutes
  4. Add sherry wine and deglaze pan, then reduce au sec
  5. Allow deep brown color to develop and then turn off heat
  6. Add the black garlic molasses and mix well
  7. Portion into metal pan, cool and label
