ingredients
- 4 lbs Spanish/Yellow Onions Half Moon Sliced (1/8 inch think)
- 4 oz Blended Olive Oil
- 3 TBSP Kosher Salt
- 8 oz Dry Sherry
- 6 TBSP Black Garlic Molasses

PROCEDURE
- Cut onions in half length wise through the core and then slice in the opposite direction to get 1/8 inch "half moons"
- In a large rondou, heat blended oil over high flame and then add onions and salt
- Cook the onions until brown color begins to develop and caramelization begins on the bottom of the pan about 7 -10 minutes
- Add sherry wine and deglaze pan, then reduce au sec
- Allow deep brown color to develop and then turn off heat
- Add the black garlic molasses and mix well
- Portion into metal pan, cool and label
