  • Flatbread - 1 ea
  • Extra Virgin Olive Oil - 1 tsp
  • Roasted grape -1/2 cup (4oz wt)
  • Sherry Glaze - 1 TBSP
  • Whipped mita cream - 2 oz wt
  • Toasted/Chopped Hazelnuts - .5 oz wt
  • Red Watercress - 7 grams

procedure
  1. Spread the olive oil across the flat bread ensuring to coat evenly
  2. Bake flat bread at 425 degrees, high fan, for 5 minutes, until crispy and golden
  3. Remove from oven and allow to cool slightly
  4. Spread the whipped mita cream across the flatbread
  5. In a saute pan, heat the grapes and sherry glaze until warm through out then top on the flat bread
  6. Garnish with hazelnuts and watercress
  7. Cut into triangles and serve on wooden board
