PROCEDURE
- Combine the miti crema & the whole milk in the robo coupe.
- Puree to smooth.
- Store in quarts or transfer to a disposable pastry bags for service.
CRITICAL CONTROL POINT
- Transfer the miti crema to a pastry bag for service in small batches, keeping a minimum of product needed at room temp for each service.
- Do not store in large batches in a pastry bag on the station, no more than a quart in a pastry bag. You will make cheese and make someone sick!
