Radicchio salad with Marcona almonds

ingredients
- 1/4 head of radicchio cut in four and then in 3 parts (before service take the 1/4 heads of radicchio and soak in ice water then dry) - 3oz
- 1/4 Asian pear sliced. Remove the inside and cut thin but not paper think, you want a little crunchy texture - 1/4" thick
- 1/4 cup aged Mahon cheese crumbled
- 2 tbsp Marcona almonds a little chopped (they should be fried & salted)
- 4 tbsp of del momento dressing
- Salt
- Black Pepper
