75g vanilla gelato ( 1 large scoop - #40 Zerol ice cream scoop)

75g chocolate gelato (1 large scoop - #40 Zerol ice cream scoop)

2 fried, cinnamon sugar-dusted churros classicos

20g hot churro chocolate sauce

45g whipped cream (3 piped dollops)

10g chocolate sprinkles

15g candied marcona almonds

10g brandied cherries ( 3 each)

1 sparkler

procedure
  1. Into a chilled split bowl, place 2 large scoops of gelato. One vanilla. One chocolate.
  2. Set 2 warm, fried churros on opposing sides of the ice cream (as if they are the bananas of your split)
  3. Next, pour the warm chocolate sauce over the ice cream.
  4. Pipe 3 dollops of whipped cream across the ice cream. Between the scoops & on both ends. (see photo)
  5. Add the chocolate sprinkles over the top of the ice cream.
  6. Tuck pieces of the candied almonds along the top of the ice cream.
  7. Then 3 brandied cherries on top of the whipped cream.

The sparkler will be added at the pass.

Cold churro split coupes are important so everything doesn't melt before it gets to the guest.
