250g honey

100g apple cider reduction

1g kosher salt

PROCEDURE
  1. Put the honey in a small pot, bring to a boil. Lower to a simmer and reduce by 20% volume.
  2. Add the apple cider reduction & bring back to a boil. Lower to a simmer and reduce further, another 20% of total volume.
  3. Add the salt.
  4. Remove from the heat & cool to room temperature.
  5. Reserve in a squeeze bottle to service at room temperature. Store in the refrigerator overnight.
