Final presentation:
- 1 medium Yellow heirloom tomato sliced (5oz)
- 1/2 Plum sliced
- About 15 slices Red onion sliced and kept in ice
- 1 tbsp Chardonnay vinegar
- 2 tbsp Olive oil
- Pinch Salt maldon
- 1 tbsp Escalivada mix herbs

procedure
- Slice tomatoes 1/4 inches thick place in plates
- Slice plums and place on top of the plums
- Put on top the red onions
- Drizzle everything with chardonnay vinegar and olive oil, salt maldon
- Finish with the fresh herbs on top.
