- Kumato Tomato 1/2 inch slice- 4 oz
- Black plum wedges - 4 oz
- Sherry Lime Marinade - 1 oz
- Sherry reduction - 1 tsp
- Extra virgin olive oil - 1 tsp
- Maldon - 1/4 tsp
- Fresh ground black pepper - garnish
- Crumbled Mita crema- 1/2 tbsp (7 grams)
- Small basil leaf - 4 ea
- Small mint leaf - 4 ea

- In a mixing bowl, combine the tomato, plums and sherry-lime marinade, toss well
- In a deep bowl, place the sliced tomato at the base and the top with the plum wedges
- Drizzle excess dressing over the top
- Drizzle sherry reduction over the plums
- Drizzle olive oil over the top
- Season dish with maldon salt and fresh ground black pepper
- Sprinkle mita crumbles evenly across the dish
- Finish with fresh mint and basil
