  • Black plum wedges - 4 oz
  • Sherry Lime Marinade - 1 oz
  • Sherry reduction - 1 tsp
  • Extra virgin olive oil - 1 tsp
  • Maldon - 1/4 tsp
  • Fresh ground black pepper - garnish
  • Crumbled Mita crema- 1/2 tbsp (7 grams)
  • Small basil leaf - 4 ea
  • Small mint leaf - 4 ea

  1. In a mixing bowl, combine the tomato, plums and sherry-lime marinade, toss well
  2. In a deep bowl, place the sliced tomato at the base and the top with the plum wedges
  3. Drizzle excess dressing over the top
  4. Drizzle sherry reduction over the plums
  5. Drizzle olive oil over the top
  6. Season dish with maldon salt and fresh ground black pepper
  7. Sprinkle mita crumbles evenly across the dish
  8. Finish with fresh mint and basil
