ingredients
  • 1/3 cup Tuna - small diced 1/4”
  • ¼ cup Avocado - diced1/4” cubes. Cover with blend oil.
  • ¼ cup Mango diced - 1/4”cubes
  • 1 Tbsp Soy Sesame Vinaigrette
  • 1 Tbsp Yogurt & Caviar Cream
  • Micro-cilantro
  • Lavash Crackers

For the caviar/yogurt sauce:

  • 1 tbsp of caviar
  • 1 cup of greek yogurt.

For the soy-sesame dressing:

  • 1000 g soy sauce
  • 600 g sesame oil
  • 400 g canola oil
  • 4 tbsp salt

For the yogurt caviar sauce:

  • Mix both ingredients. Set aside.

For the soy sesame dressing:

  • Mix all ingredients in a bowl with a wish
  • Set aside in squeeze bottles.

Final presentation:

  • Strain avocado
  • In a bowl mix carefully all ingredients for the tuna tartar except the micro cilantro and caviar sauce. .
  • Plate as pictured. placing a little bit of the sauce on the side.
  • Finish with micro-cilantro on top.
