  • Sliced Avocado - Half ea.
  • Fava Bean - 1/4 cup
  • Grape tomato halves - 1/4 cup
  • Kosher Salt - 1/4 tsp
  • Citrus Vinaigrette - 1/2 oz fl
  • Black Rice - 1/2 cup
  • Grilled lime - 1/2 ea
  • Ponzu - 1/4 tsp
  • Olive Oil - 1/4 tsp
  • Maldon Salt - 1/4 tsp
  • Chives - 1/4 tsp

procedure
  1. In a small mixing bowl toss the grape tomatoes and fava beans with the citrus vinaigrette and kosher salt and portion into the 5 o'clock position of the plate
  2. Take a half avocado, slice it 1/8 inch thick, vertically, and then spoon out from its skin onto 11 o'clock position of the plate
  3. Place half cup of black rice at the 1 o'clock position of the plate
  4. Slice the tuna 1/4 inch thick and shingle from the 6 -10 o'clock position
  5. Place the grilled lime in the center of the plate
  6. Top each slice of tuna equally with ponzu
  7. Garnish the avocado and tuna with extra virgin olive oil then top with chives
  8. Finish with maldon
