Tosta de Aguacate

Mashed avocado, Manchego cheese, citrus vinaigrette, watercress, grape tomatoes on toasted brioche

For the avocado mashed

  • 1 each Avocado  
  • 1/2 tsp Lemon Juice    
  • 1/4 tsp Kosher Salt  

Final Presentation:

  • 1 ea Brioche 1.5 inch thick   
  • 1/2 cup Mashed Avocado      
  • 1/2 cup Watercress
  • 1 oz halved grape tomato
  • 1/4 tsp Maldon salt  
  • 7 grams Manchego finely grated
  • 1/2 oz Citrus Vinaigrette

For the avocado mashed:

  • Lightly mash avocado with lemon and salt to taste (This item can be made for the entire shift based on p-mix levels)

Final Presentation

  • Sear the brioche toast with a little olive oil on a plancha about 30 seconds per side. Make sure have a nice char on it.
  • Put the avocado mashed and grape tomato on top of the toast and season with maldon salt
  • Top with manchego cheese
  • Toss the watercress with the citrus vinaigrette and put on top of toast

•You can pre-mash avo, but the shelf life is 1 shift.

•Your brioche should be nice and toasted on the outside, but still soft in the center.

•Make sure you use red watercress, because it’s beautiful.
