On a small shallow dish, place 1 oz of honey yogurt and spread to nearly the edge
Place the olive oil cake in center of plate on top of honey yogurt
Garnish with powdered sugar over the cake and then orange zest
Top with orange segment and mint leaf as shown in picture
Finish with some droplets of olive oil over the cake and yogurt so they look like beads

Stick a toothpick into the cente rof the cake after 45 minutes, if it’s dry it’s done
Use the Califia Farms brand of oatmilk to ensure the right consistency. Other brands are not thick enough. Otherwise the olive oil and the oat milk will separate.
Need to use AP flour otherwise your cake will crack at the top after it’s been baked.
Don't overwhip the batter. If you do the cake will be too dense.
