- 1 Setas Por tion (6 oz cup)
- 0.35 oz Manchego
- 5 thin slices of garlic
- 1 sprig of Thyme
- 1 tbsp of lemon ju ice
- 1 tbsp of sherry vinegar
- 2 oz of olive oil
- 6 slices of raw oyster mushrrom (cut in julienne)
- Lemon zest

procedure
- In a sautée pan, sweat garlic in olive oil
- Add Setas Portion and season with salt, add thyme
- Saute until the mushrooms begin to color
- Deglaze with a touch of sherry vinegar and lemon juice
- Plate and add Manchego cheese and lemon zest on top .
- In a separate bowl mix the oyster mushrooms with olive oil, lemon juice and salt.
- Put the mushrooms on top of the cheese
- Sprinkle with chives
