  • 1 Setas Por tion (6 oz cup)
  • 0.35 oz Manchego
  • 5 thin slices of garlic
  • 1 sprig of Thyme
  • 1 tbsp of lemon ju ice
  • 1 tbsp of sherry vinegar
  • 2 oz of olive oil
  • 6 slices of raw oyster mushrrom (cut in julienne)
  • Lemon zest

procedure
  • In a sautée pan, sweat garlic in olive oil
  • Add Setas Portion and season with salt, add thyme
  • Saute until the mushrooms begin to color
  • Deglaze with a touch of sherry vinegar and lemon juice
  • Plate and add Manchego cheese and lemon zest on top .
  • In a separate bowl mix the oyster mushrooms with olive oil, lemon juice and salt.
  • Put the mushrooms on top of the cheese
  • Sprinkle with chives
