- 1/2 each Shallot
- 2 each Garlic clove
- 2 tbsp Olive oil
- 4 cups Spinach chopped
- 1.5 cups Heavy cream
- 4 ea large eggs
- 2 ea egg yolk
- Salt to taste
- Black Pepper to taste
- 85 gr feta cheese
- 3 tbsp chives
- 1 ea pastry crust

procedure
- Cook garlic sliced and shalloots chopped with olive oil
- Add spinach, cook for 1 minute and transfer to a bowl. Cool down
- Add cream, eggs, salt, pepper, whisk until combined
- Pour over the crust, cook at 350F until cooked.

- Make sure to don't overcook the quiche. When leaving the oven should be a little creamy or soft.
