  • 1/2 each Shallot      
  • 2 each Garlic clove     
  • 2 tbsp Olive oil     
  • 4 cups  Spinach chopped    
  • 1.5 cups    Heavy cream     
  • 4 ea large eggs    
  • 2 ea egg yolk    
  • Salt to taste    
  • Black Pepper to taste    
  • 85 gr feta cheese    
  • 3 tbsp chives  
  • 1 ea pastry crust

procedure
  • Cook garlic sliced and shalloots chopped with olive oil
  • Add spinach, cook for 1 minute and transfer to a bowl. Cool down
  • Add cream, eggs, salt, pepper, whisk until combined
  • Pour over the crust, cook at 350F until cooked.
critical control points
  • Make sure to don't overcook the quiche. When leaving the oven should be a little creamy or soft.
