• 1 gallon of red wine
• 1 qt of sugar
• 2 cinnamon sticks
• 8 cardamom seeds
• 4 cloves
• 2 star anis
• almond streussel
• 1 Recuit / Mato
• Cook pears until soft and reduce the liquid until sauce consistency (be careful not to burn!)
Final Presentation:
• Serve the pear on top of a recuit and almond streussel , top with mint micro leaves.
