  • 1 tbsp of fava beans (blanched for 10 seconds, shocked in iced water and peeled)
  • 0.25 jamon iberico (thick slice cut in thin julienne)
  • 1 tbsp of garlic sliced
  • 1 guindilla pepper
  • 1 tsp chopped parsley
  • 1 tsp sherry vinegar
  • 1 tsp lemon juice
  • Salt to taste

procedure
  • With a knife slit the razor clams.
  • On a try put razor clams, salt and olive oil.
  • Grill clams open side down until caramelized and cooked,.
  • At the same time make a ajillo sauce; place olive oil, garlic and guidilla pepper on a saute pan, cook until garlic starts to caramelize
  • Add fava beans and jamon iberico cook for 10 seconds
  • add sherry, lemon juice and parlsey
