Toasted Nuts, Guajillo Chile and Lime Spiced Pistachios and Hazelnuts

The perfect bar snack. Toasted assorted nuts and elevated lime and a slight kick from the chile. Guajillo Chiles are dried chiles, native to Mexico. They are rich, earthy a fruity and relatively mild compared to other chiles.

Before service:

Mixed Nuts

  • 1 qt Toasted Hazelnuts
  • 1 qt Toasted pistachios

Mixed Spices

  • 1/2 cup Kosher Salt
  • 1/2 cup Sugar
  • 1/8 cup Citric Acid
  • 1/8 cup Ground Toasted Chilii de Arbol
  • 1/4 cup Ground Toasted Guajillo Peppers

Before service

  • Place toasted pistachios and toasted hazelnuts in a mixing bowl.
  • Set aside in quart containers. Label, date.
  • Add all spices in a mixing bowl
  • Mix well. Set aside in quart container. Label, date.

For service:

  • Place 1 cup of mixed nuts in the oven for 4 minutes.
  • Add hot nuts to mixing bowl.
  • Add 1 TB of mixed spices
  • Mix well and serve
