5 jumbo shrimp served with our tomato-based, passionfruit cocktail sauce. The sauce gets it's heat from the Chile de arbol in the recipe.

ingredients
For the Shrimp
- 2 lbs Shrimp peeled and cleaned.
- 1 qt water
- 4 Tbs Kosher Salt
- 2 wt oz black peppercorns cracked
- 2 bay leaves
- 4 cloves garlic peeled and smashed
- 6 halved lemons
Passion Fruit Cocktail
- 3 each roasted and peeled medium tomatoes
- 1 cup ketchup
- 1 TB toasted ground chile de arbol
- 1 cup passion fruit juice
- 1 each garlic clove
- 2 TB sugar
- 4 TB fresh squeezed lime juice
- 1 TB kosher salt
Final presentation:
- 5 ea shrimp cooked
- 4 oz of cocktail sauce
- 1 lemon wages
- 1 tsp chopped chives

procedure
For the shrimp:
- Bring all the ingredients to boil
- Poach the shrimp for 1 minute
- Remove shrimp and place in ice water until reaches 40 degrees.
For the cocktail sauce:
- Place all the ingredients in a blender and blend until smooth.
- Place in a quart container. Set aside in refrigeration
Final presentation:
- Place 4 oz of cocktail sauce in a martini glass
- Place cooked shrimp on the side of martini glass with tail hanging out.
- Garnish with chopped chives and lemon wedge
