Shrimp Cocktail, Chili de Árbol and Passion Fruit Cocktail Sauce

5 jumbo shrimp served with our tomato-based, passionfruit cocktail sauce. The sauce gets it's heat from the Chile de arbol in the recipe.

For the Shrimp  

  • 2 lbs Shrimp peeled and cleaned.
  • 1 qt water
  • 4 Tbs Kosher Salt
  • 2 wt oz black peppercorns cracked
  • 2 bay leaves
  • 4 cloves garlic peeled and smashed
  • 6 halved lemons

 

Passion Fruit Cocktail

  • 3 each roasted and peeled medium tomatoes
  • 1 cup ketchup
  • 1 TB toasted ground chile de arbol
  • 1 cup passion fruit juice
  • 1 each garlic clove
  • 2 TB sugar
  • 4 TB fresh squeezed lime juice
  • 1 TB kosher salt

Final presentation:

  • 5 ea shrimp cooked
  • 4 oz of cocktail sauce
  • 1 lemon wages
  • 1 tsp chopped chives

For the shrimp:

  • Bring all the ingredients to boil
  • Poach the shrimp for 1 minute
  • Remove shrimp and place in ice water until reaches 40 degrees.

For the cocktail sauce:

  • Place all the ingredients in a blender and blend until smooth.
  • Place in a quart container. Set aside in refrigeration

Final presentation:

  • Place 4 oz of cocktail sauce in a martini glass
  • Place cooked shrimp on the side of martini glass with tail hanging out.
  • Garnish with chopped chives and lemon wedge
