Final presentation:
- 1 ea lamb patties 2 oz
- 1 tbsp of tzaziki
- 1 tbsp pikled red onion
- 1 brioche bun
- Salt, pepper
- Olive oil
Tzaziki sauce:
- Labne yogurt
- Olive oil
- Dill
- Small diced cucumber
- Lemon juice
Pickled red onion
Pickled liquid:
- 4 cups white wine vinegar
- 4 cups water
- 1 cup sugar
- 1 sache
- 1 tsp black pepper
- 1 tsp white pepper
- 1 anis star
- 3 cloves
- 3 tbsp mustard seeds
- 4 dry guidilla peppers
- 2 Garlic clove
- 2 bay leaves
- 1 sprig rosemary
- 2 sprig thyme

procedure
PIckled liquid:
- Bring to boil and pour over the sliced red onions in julienne.
Tzaziki sauce:
- Mix diced cucumbers, dill and yogurt
- Drizzle with olive oil and lemon juice
- Season with salt.
- Set aside.
Final presentation:
- Cook the patties in the oven for 5 minutes at 450F
- Heat up the bread in oven a few seconds.
- place burger on top of the bottom of the bread
- place a tbsp of sauce on top
- finish with pickled onions
- Cover with the other side of the bread
- plate as pictured with skewers and parchment paper
