Final presentation:

  • 1 ea lamb patties 2 oz
  • 1 tbsp of tzaziki
  • 1 tbsp pikled red onion
  • 1 brioche bun
  • Salt, pepper
  • Olive oil

Tzaziki sauce:

  • Labne yogurt
  • Olive oil
  • Dill
  • Small diced cucumber
  • Lemon juice

Pickled red onion

  • Red onion
  • Pickled liquid

Pickled liquid:

  • 4 cups white wine vinegar
  • 4 cups water
  • 1 cup sugar
  • 1 sache
  • 1 tsp black pepper
  • 1 tsp white pepper
  • 1 anis star
  • 3 cloves
  • 3 tbsp mustard seeds
  • 4 dry guidilla peppers
  • 2 Garlic clove
  • 2 bay leaves
  • 1 sprig rosemary
  • 2 sprig thyme

PIckled liquid:

  • Bring to boil and pour over the sliced red onions in julienne.

Tzaziki sauce:

  • Mix diced cucumbers, dill and yogurt
  • Drizzle with olive oil and lemon juice
  • Season with salt.
  • Set aside.

Final presentation:

  • Cook the patties in the oven for 5 minutes at 450F
  • Heat up the bread in oven a few seconds.
  • place burger on top of the bottom of the bread
  • place a tbsp of sauce on top
  • finish with pickled onions
  • Cover with the other side of the bread
  • plate as pictured with skewers and parchment paper
