Think of this as a Spanish version of Poutine. Crispy shoestring fries are served on top of truffled potato purée. Topped with cured serrano ham and a fried egg. Pure comfort food.

Crispy fries with jamon and eggs. We recommend breaking the egg yolk and mixing it in with all of the ingredients so you get a little bit of everything with each bite.

- Potato Cream - 3 oz volume
- 1/4in Shoestring fries - 5 oz (raw weight)
- Jamon Serrano - .5 oz wt
- Fried Egg - 1 ea
- Maldon Salt - 1/4 tsp

procedure
- Fry shoestrings at 375 for 4 minutes, until golden brown
- Place potato cream in metal bowl and spread evenly to edges
- Pile shoestrings high in center of potato cream
- Tear serrano into smaller pieces and place randomly around the shoestrings
- Lightly fry an egg to over easy in extra virgin olive oil and pot over the shoestrings
- Garnish with Maldon salt

- Stir the puree pot regularly so that the cream doesn’t scorch
- Make sure your jamon is well shredded so it’s visible and that there is a piece in every bite
