  • Potato Cream - 3 oz volume
  • 1/4in Shoestring fries - 5 oz (raw weight)
  • Jamon Serrano - .5 oz wt
  • Fried Egg - 1 ea
  • Maldon Salt - 1/4 tsp

procedure
  1. Fry shoestrings at 375 for 4 minutes, until golden brown
  2. Place potato cream in metal bowl and spread evenly to edges
  3. Pile shoestrings high in center of potato cream
  4. Tear serrano into smaller pieces and place randomly around the shoestrings
  5. Lightly fry an egg to over easy in extra virgin olive oil and pot over the shoestrings
  6. Garnish with Maldon salt

  • Stir the puree pot regularly so that the cream doesn’t scorch
  • Make sure your jamon is well shredded so it’s visible and that there is a piece in every bite
