- 1 whole egg, sunny-side up
- 1 TBSP Extra Virgin olive oil
- 5 oz picanha
- 1 TBSP Kosher Salt
- 1 TBSP Cracked Black Pepper
- 1 oz Mojo Verde
- 2 oz Brava potato
- 1/4 tsp Maldon

procedure
- Season and sear the picanha on the flat top using the same recipe as the Carne a la parrilla
- Fry 2 oz of brava potatoes, season with pimenton and salt as usual
- Fry 1 egg in extra virgin olive oil on very low heat to sunny side up
- Place bravas in caserole dish (no sauce, no aioli)
- Slice the steak into 5 equal slices and layer over potato
- Top steak with mojo verde then top with sunny side egg
- Finish with maldon salt.
