  • 3 whole leaves of lollo rosso
  • 3 whole leaves of butter lettuce
  • 3 whole leaves of gem lettuce
  • 2-3 tbsp of walnut dressing
  • 1 tbsp of crunchy panko

procedure

Before service:

  • Clean the lettuces under cold water and dry with a salad spinner. Make sure the salad is crunchy and fresh before service

For the dressing:

  • Deep-fry slightly the walnuts, blend with white wine vinegar and blend oil

For the Panko croutons:

  • On a pan put olive oil, a few thyme leaves, add panko and salt, saute until the panko is golden brown and crispy.

Final presentation:

  • In a bowl, put the salad and drizzle with the dressing and salt to taste.
  • Mix carefully with a spoon (if you do it with your hands you will likely smash the salad which is not good)
  • plate as pictured and finish with some crunchy panko on top.
