- 4 segments grapefruit
- 10 leaves of mint
- 5-6 Fennel fronds
- 1 oz Manchego cheese sliced
- 2 tbsp walnuts pre-fried, salted and crushed
- 3 tbsp citrus dressing
- Maldon salt
