A citrus salad that is best with winter citrus from Florida

ingredients
3 slice (2.5oz) Cara Cara Oranges
2 slice (2.5oz) Grapefruit
3 slice (2.5oz) Blood orange
8 pcs Hazelnuts toasted, salted and coarsely chopped
7 medium size leaves Mint
2 tbsp Arbequina Olive oil
pinch Aleppo pepper
0.25 oz Manchego cheese peels
10 medium size rings white onion rings
1 tsp Chardonnay vinegar

procedure
Slice (on a slicer only) the small white onions at 1/8 " thick enough so has a bite on it. Put in ice water at least 2 hours before using them to remove the onion taste.
Final presentation:
Drizzle onion rings in a bowl with chardonnay vinegar.
Put 2 slices of grapefruit, 3 of orange and 3 of blood orange spread it around the plate. (obviously this will all depend on the size, plate a nice balanced portion)
Season with maldon salt and aleppo pepper
Place onion slices on top, mint, and hazelnuts
Drizzle with a good amount of arbequina olive oil to finish.
Finish with manchego peels cheese on top.
critical control points
This dish it will only be succesful if the citrus are at their best. Florida citruses are best in the winter.
