Final presentation:
- 5 oz Cucumber peeled and sliced on bias (11 slices)
- 10-12 pc Red onion Sliced (put in iced water)
- 1 tsp Chardonnay vinegar
- 1 tbsp Olive oil
- 4 pc Mint ripped
- 6 pc Dill
- 7 tsp Miti Crema (room temperature)
- Maldon salt
- Black pepper
- 2 pinch Fennel pollen

procedure
Before service:
- Peel cucumbers and set in refrigerator.
- Slice red onions and place in iced water
Final presentation:
- Cut cucumber in slices
- Place on a plate.
- Add red onions on top
- Drizzle with chardonnay vinegar.
- season with maldon salt, fennel pollen
- Drizzle with Olive oil
- Place miti crema cheese on top
- Finish wirh hebs and black pepper
