Final presentation:

  • 5 oz Cucumber peeled and sliced on bias (11 slices)
  • 10-12 pc Red onion Sliced (put in iced water)
  • 1 tsp Chardonnay vinegar
  • 1 tbsp Olive oil
  • 4 pc Mint ripped
  • 6 pc Dill
  • 7 tsp Miti Crema (room temperature)
  • Maldon salt
  • Black pepper
  • 2 pinch Fennel pollen

Before service:

  • Peel cucumbers and set in refrigerator.
  • Slice red onions and place in iced water

Final presentation:

  • Cut cucumber in slices
  • Place on a plate.
  • Add red onions on top
  • Drizzle with chardonnay vinegar.
  • season with maldon salt, fennel pollen
  • Drizzle with Olive oil
  • Place miti crema cheese on top
  • Finish wirh hebs and black pepper
