Check the interior temp of the fried croquetas periodically with a cake tester.
Croquetas need to be slacked out in the fridge overnight, do not start the day with frozen product.
Clean your fryer frequently with the spider skimmer, you do not want bits of other fried items to make their way to the guest.
If you have to pre-fry croquettes, it is very important that you only pre-fry what you need for service. Always check with your CDC/Sous Chefs for a sales amount to prevent waste.
Do not serve broken or cracked croquetas. They should hold their square or round shape.
