- Brussels sprouts halved - 6 oz raw wt
- Kosher Salt - 1/2 tsp
- Orange Honey Yogurt - 2 oz
- Blanched Julienne Orange zest- 8 grams
- Grated orange zest - 1/4 tsp
- Extra virgin Olive oil - 1/4 tsp
- Maldon Salt - 1/4 tsp

procedure
- Fry brussels sprouts at 375 for 3 minutes, or until golden and crispy
- Drain well of oil and then toss in a mixing bowl with kosher salt
- In a deep small grey bowl, place honey yogurt on one side of the bowl
- Place brussels sprouts on opposite side of bowl and stack high
- Top with the julienned orange zest and the grated orange zest over the brussels and yogurt
- Garnish the brussels with maldon and the yogurt with droplets of olive oil

- Make sure to blanch the julienne orange zest and then chill in an ice bath to remove any bitterness the orange peel has
- Drain well to prevent excess oil from collecting on the plate
