  • Brussels sprouts halved - 6 oz raw wt
  • Kosher Salt - 1/2 tsp
  • Orange Honey Yogurt - 2 oz
  • Blanched Julienne Orange zest- 8 grams
  • Grated orange zest - 1/4 tsp
  • Extra virgin Olive oil - 1/4 tsp
  • Maldon Salt - 1/4 tsp

procedure
  1. Fry brussels sprouts at 375 for 3 minutes, or until golden and crispy
  2. Drain well of oil and then toss in a mixing bowl with kosher salt
  3. In a deep small grey bowl, place honey yogurt on one side of the bowl
  4. Place brussels sprouts on opposite side of bowl and stack high
  5. Top with the julienned orange zest and the grated orange zest over the brussels and yogurt
  6. Garnish the brussels with maldon and the yogurt with droplets of olive oil

  • Make sure to blanch the julienne orange zest and then chill in an ice bath to remove any bitterness the orange peel has
  • Drain well to prevent excess oil from collecting on the plate
