So delicious you won't believe you're eating broccoli. The garlick-y almond ajo blanco with the raisins is a great balance of sweet and savory. A great vegan option that's full of flavor.

Roasted Broccoli

ingredients
- 5 oz / 140g broccoli florets, roasted (packed, overfull pint container)
- 1 T Blended Olive Oil
- 1 tbsp / 12g golden raisins
- 2 pinch / less 2 g sumac
- 2 fl oz Ajo Blanco dressing, room temperature
- 1 tbsp / 8g Marcona almonds, fried and rough chopped
- 7 each / less 1 g mint leaves
- 1/4 t Kosher Salt

Before Service:
- Prepare the broccoli, cutting to medium florets and removing most of the core.
For Service:
- In a bowl, season the broccoli florets with blended olive oil, kosher salt, and the pinch of sumac.
- Start cooking the broccoli in a screaming hot pan until lightly charred
- Roast the florets of broccoli in the oven for approximately 6 minutes at 450ºF.
- Place in a bowl, mix with the Ajo Blanco dressing, golden raisins, and Marcona almonds.
- Add mint leaves on top and plate.
- Finish with a pinch of sumac on top.
critical control points
- Cook the broccoli a la minute or at least in small batches of 3-4 portions at the time.
- Toss the ajo blanco well so it evenly coats all pieces of broccoli
- The pan needs to be SCREAMING hot to get a nice char on the broccoli before going into the oven
