Final presentation
- 1 poached egg
- 1 pint of spinach
- 2.5 oz of tuna (see below for recipe)
- 1 cup of cooked forbidden rice
- 1 tbsp Fresh mixed herbs of escalivada
- 1/2 avocado
- Salt , pepper, olive oil
For the forbidden rice:
- 1 cup rice
- 3 cups of water

Forthe Forbidden rice:
- Rince the rice under water until water becomes transparent
- Put rice and water in a pot. add salt
- Cover and cook at very low heat until rice is cooked and water absorbed. Cool down in sheet trays.
- Set aside in pints (1 cup each)
Finalpresentation:
- Heat up the rice with a little olive oil in a sauté pan.
- In a pot with water and a bit of white vinegar poach the egg until egg white is cooked and yolk is runny.
- Sauté the spinach with garlic, olive oil, sherry, salt and lemon juice
- Plate the rice, sautéed spinach, sliced avocado, poached egg and tuna. finish with olive oil, maldon salt, mixed herbs and black pepper.
