- Hawaiian Bun - 1 ea
- Beef slider patties - 3 ea
- Kosher Salt - 1/2 tsp
- Black Pepper Grind - 1/2 tsp
- Shredded Mahon Cheese - 1 oz
- Bacon Jam - 1 TPS
- Garlic Aioli - 1 TBSP
- Red Leaf Lettuce - 1 ea
- Pickled Shallots- 8 grams
- Potato chips - 1.5 oz wt

procedure
- Oil both sides of the bun and toast all sides on the flat top, reserve on the side
- Combine the 3 patties together and then smash on the plancha with burger weight as thin as possible and season with salt and pepper
- Let caramelization build before flipping
- Flip the burger and top both with shredded mahon
- While the cheese is melting, put the garlic aioli on the top bun and the chorizo jam on the bottom bun
- Place the lettuce on the bottom bun and then stack the burger on top and finish with the pickled shallots
- Top with top half of bun and serve with chips
critical control points
- The bun burns extremely quick so do not leave it on more the 30 seconds
- The burger patty will shrink while cooking on the flat top so make sure to get them as thin and wide as possible when smashing them together
- Mahon must be shredded to get an even spread across the patties
