ingredients
Final presentation:
- 1 cup Black rice cooked
- 2.5 oz Grilled ahi tuna (salt pepper)
- 1 each soft boiled egg
- 1 pint of Spinach sautéed with garlic, salt, sherry, lemon, olive oil
- 2 tbsp Escalivada Herbs
- 1/2 each Avocado cut into 1/4" slices and lemon
- Olive oil
- Maldon
- Black pepper
For the tuna:
- 2.5 oz of tuna
- Salt
- Pepper
Black Rice:
- 2 cup of rice
- 6 cups of water.
- salt to taste

procedure
For the Black rice:
- Rinse under water the rice until water is transparent.
- Put rice and water in a pot, add salt, cover and cook at very low temperature until rice gets cooked and water is absorbed. We look more for a sticky rice than al dente here.
- Set aside in trays and cool down.
For the soft boiled egg:
- Remove eggs from cooler 1 hour before cooking them.
- Put a pot with water to boil. Once water boils, add carefully eggs (shell on), put a timer and count 6 to 6:30 minutes (depending if they are big or small eggs).
- Remove from water and shock with iced water, leave inside for at least 10 minutes to make sure eggs are completely cold inside.
- Peel and set aside.
For the Tuna:
- Before service, portion the tuna in 2.5 oz dices, add salt and pepper. Mark all for sides on a plancha with olive oil and really quick. we want to the tuna to be raw inside. shock in ice water for 15 seconds to stop the cooking process.
Final presentation:
- In a sauté pan, add 2 tbsp of olive oil, garlic, cook for 20 seconds keeping the garlic still with no color, add spinach, salt, lemon juice and sherry vinegar. cook for about 30 seconds until the spinach is a little soft. Don't overcook.
- Heat up rice on a small sauce pan with a little water and olive oil.
- Slice avocado
- Place rice, spinach and avocado on the bottom of the bowl.
- Carefully Slice Tuna in 1/4 inch slices and place on top
- Add the Soft boiled egg on top.
- Finish with escalivada herbs, maldon salt, olive oil and pepper.
critical control points
- Make sure to cook properly the eggs, you want the white completely cooked and the yolk totally liquid. The best would be to do one first see how it cooks and the cook bigger batches.
