For the sandwich:

  • 2 slices of white bread
  • 3 slices of serrano ham
  • 1 tbsp of truffle paste
  • 2 slices of fresh mozzarella cheese 1/4 inch thick.

Final presentation:

  • 1 sandwich
  • 1 tbsp of butter
  • 1/2 carrot pickled
  • 1/2 pickled radish

procedure

before service:

  • Build sandwiches putting a tbsp of truffle paste on one side of the bread.
  • Add a tbsp of truffle oil
  • Put the mozzarella cheese on top
  • Finish with the serrano ham slices on top of the cheese.
  • Place the other piece of bread on top
  • Wrap individually with plastic film
  • put a date on them

Final presentation;

  • Unwrap one sandwich
  • Place a little room temperature butter in both sides of the bread
  • Place sandwich in panini press. cook until sandwich is toasted and cheese melted
  • Cut the borders of the sandwich, and cut sandwich in half and then in half again. you want to end up with triangles.
  • Plate as pictured with parchment paper underneath and pickle carrot and radish
