For the avocado mashed

  • 1 each Avocado  
  • 1/2 tsp Lemon Juice    
  • 1/2 tsp Salt  

Final Presentation:

  • 4.5 oz of eggs beaten
  • 1 tsp calabrian chili
  • 1 ea Sourdough toast sliced      
  • 1/2 each Avocado      
  • 1/2 tsp  Black sesame        
  • 1/2 bunch Watercress  
  • 1 pinch Maldon salt    
  • 6 pcs  dill    
  • 1 Tbsp  Salsa Verde

For the avocado mashed:

  • Lightly mash avocado with lemon and salt to taste

Final Presentation

  • Sear the sourdough toast with a little olive oil on a plancha about 30 seconds per side. Make sure have a nice char on it.
  • Put the avocado mashed on top of the toast.
  • In a non stick saute pan, add olive oil, put the beaten eggs and the sliced calabrian chili. with a rubber spatula keep moving and cook for about 20-30 seconds until soft scrambled.
  • place scrambled egg on top of the avocado.
  • Season with maldon salt and black sesame
  • Finish with salsa verde and watercress on top
