  • Citrus Allioli is made using roasted lemons and limes, to bring out the sweetness in the fruits and compliment the acid. Layered in is Espellete pepper to add depth of flavor. Espellete peppers are native to the northern territory of Basque country.

  • Marinated Artichokes with Stems - 2 ea cut in half lengthwise (7 oz)
  • Kosher Salt - 1/4 tsp
  • Citrus Aioli - 3 oz
  • Lime Zest - 1/8 tsp
  • Large Parsley Sprigs

procedure
  • Cut Artichoke in half length wise
  • Fry Artichokes for 4 minutes at 375 degrees until golden and crispy
  • Remove from fryer and let drain on a paper towel and season with kosher salt
  • On a long plate place citrus aioli from one end to the other
  • Shingle the artichokes over the citrus aioli
  • Finish with fresh zested lime and parlsey sprigs
