ADDITIONAL PREP RECIPE
ingredients
  • Marcona Almonds Chopped - 32 wt oz
  • Garlic minced- 4 oz
  • Caldo Moreno - 64 fl oz
  • Extra Virgin olive Oil - 4 fl oz
  • Smoked Hot Pimenton - 38 grams

PROCEDURE
  • In a large pot over low flame, heat the olive oil and sweat the garlic until fragrant and translucent, about 5 minutes. DO NOT BROWN
  • Add the chopped marcona almonds, raise heat to medium flame and cook another 5 minutes until almonds become fragrant
  • Stir in the pimenton and allow to cook for another 2 minutes
  • Add in the caldo moreno, stirring to remove any bits stuck to the bottom of the pot.
  • Increase heat and bring the stock to a simmer. Simmer for 10 minutes to allow flavors to blend. Do not boil
  • Remove from heat and with a hand blender ot vita mixer, puree until completely smooth
  • Keep warm in a double boiler for service
CRITICAL CONTROL POINT
  • Do not hold hot for more than 4 hours
  • You can add a little veggie stock if you see the mixture starts to become dry during the middle of the shift
