  • Butter Unsalted - 1 lb
  • Lemon Juice - 2 oz fl
  • Lemon Zest - 1 oz wt
  • Fine dice parsley - 4 tbsp
  • Fine Diced Dill - 4 tsp
  • Kosher Salt - 4 tsp

PROCEDURE
  1. Cut the butter into 1 oz cubes
  2. Combine all ingredients in a mixing bowl
  3. Place mixing bowl over a low heat source to gently soften the butter
  4. Using a rubber spatula, mix all ingredients thoroughly until well combined
  5. After ingredients are well incorporated allow the butter to firm slightly and then portion onto parchment paper
  6. Roll the paper and butter to create a cylinder that is 2 inches in diameter
  7. Label, refrigerate and reserve for service
