ingredients
- Cassareccia Pasta - 1 Lb
- Kosher salt 1 oz
- Water - 2 Gallon
- Ice
- Blended olive oil- 2 oz

PROCEDURE
- In a large pot, bring water to a boil and add kosher salt
- Add pasta and cook for 8 minutes
- Turn off heat and top the pot with ice
- Once cooled, strain the pasta and drizzle with olive oil to keep from sticking together
- Portion into 4oz portions
- Label, refrigerate and reserve for service
