ingredients
- 1 cup AP Flour
- 1 1/2 teaspoon Baking powder
- 1/4 teaspoon Salt
- 5 Eggs whites room temperature
- 4 Egg yolks room temperature
- 1 cup Sugar
- 1/4 cup Milk
- 1/4 cup Orange Juice
- 1 tsp Vanilla extract
- zest of 1, lemon, lime, and orange
For Tres Leches Mix
- 10oz condense milk
- 10oz evaporated milk
- 10oz coconut milk
- 1 Tablespoon vanilla paste
- lemon zest, orange zest, lime zest

PROCEDURE
- In a small bowl mix flour, salt, baking powder, and orange, lemon, and lime zest. set a side
- Place egg whites with 1/4 of sugar in mixing bowl until stiff peaks. Remove from the mixing bowl and place in cool area. Set aside for later use
- Place egg yolks with the rest of the sugar, mix for 5 minutes on high speed. set aside
- Combine milk, orange juice, and vanilla. set aside
- Fold dry ingredients with egg whites in 3 parts alternating with the egg yolk mix.
- Once everything is folded in fold in the milk, orange juice and vanilla extract
- Bake at 350F for 25-28 minutes
- Set aside to cool
- Combine tres leches mixture in a bowl and pour over the cake once its cool
- leave over night soaking in the milk to get amoist center.
CRITICAL CONTROL POINT
- Egg whites must be Folded in so they don't deflate in the process
- Keep oven door closed through the cooking time to make sure to bakes evenly
- Plenty of milk to keep it moist.
