ingredients
  • 1 cup AP Flour
  • 1 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 5 Eggs whites room temperature
  • 4 Egg yolks room temperature
  • 1 cup Sugar
  • 1/4 cup Milk
  • 1/4 cup Orange Juice
  • 1 tsp Vanilla extract
  • zest of 1, lemon, lime, and orange

For Tres Leches Mix

  • 10oz condense milk
  • 10oz evaporated milk
  • 10oz coconut milk
  • 1 Tablespoon vanilla paste
  • lemon zest, orange zest, lime zest

PROCEDURE
  • In a small bowl mix flour, salt, baking powder, and orange, lemon, and lime zest. set a side
  • Place egg whites with 1/4 of sugar in mixing bowl until stiff peaks. Remove from the mixing bowl and place in cool area. Set aside for later use
  • Place egg yolks with the rest of the sugar, mix for 5 minutes on high speed. set aside
  • Combine milk, orange juice, and vanilla. set aside
  • Fold dry ingredients with egg whites in 3 parts alternating with the egg yolk mix.
  • Once everything is folded in fold in the milk, orange juice and vanilla extract
  • Bake at 350F for 25-28 minutes
  • Set aside to cool
  • Combine tres leches mixture in a bowl and pour over the cake once its cool
  • leave over night soaking in the milk to get amoist center.
CRITICAL CONTROL POINT
  • Egg whites must be Folded in so they don't deflate in the process
  • Keep oven door closed through the cooking time to make sure to bakes evenly
  • Plenty of milk to keep it moist.
